Salted Chocolate Slice

This decadent slice is the perfect afternoon pick me up. The rich chocolatey fudge layer combined with the chewy base and crunchy cacao nibs on top ticks all my boxes! The touch of salt adds an extra level of taste explosion and I suggest cutting this into small pieces as I guarantee you will not be able to stop yourself going back for seconds! 


Salted Chocolate Slice

Ingredients

Base
2 1/2 cups of pitted dates
2 1/2 cups blanched almonds
3/4 cup cacao
3/4 cup melted coconut oil

Filling
2 cups melted coconut oil (at room temperature) 
1 cup rice malt syrup
1 cup cacao
2 tsp good quality salt

Topping
1/2 cup of base mix (reserve after blending)
1/2 cup shredded coconut
1/2 cup raw cacao nibs


Method

Line a slice tin with baking paper. 
Place all the ingredients for the base into a food processor and pulse until the mix resembles bread crumbs. Pour mix into the slice tray, reserving half a cup for the topping. Press well into the corners and edges until the base is evenly flat all over and well packed. Place in the fridge while you make the filling.

Combine all the filling ingredients in a food processor or nutri bullet and blend until you have a silky smooth consistency.  Pour over the base making sure you have an even layer. Leave to one side while you make the topping. 

In a bowl combine the reserved base mix with coconut and cacao nibs. Mix with your hands until well combined. Sprinkle in an even layer over your filling. Place slice in the fridge to set for at leat 2 hours. 

Remove from the fridge and cut into squares, rectangles or triangles using a ruler or your own judgement. Enjoy!
