Basil Pesto

I love basil pesto. The smell of basil always reminds me of long hot summers growing up on the farm. The glass houses would be full of basil plants and the herbaceous smell would be the first thing that hit you when entering on a warm day. Mum would often whip up a batch of pesto and serve it with pasta for a simple midweek meal.
I think it is such a great staple to have in the fridge over summer as it is so versatile. This pesto works well as a salad dressing, served over pasta, used in a sandwich or served as a dip along side cheese and crackers. 



1 bunch of basil
1/2 cup blanched almonds
1 cup olive oil
1/4 cup parmesan
2 cloves garlic
1 lemon  juice
1 1/2 tsp salt


Place everything in a nutri bullet or food proccesor. Blend until the colour becomes a bright green and the mix is smooth. Pour into an airtight container and store in the fridge until ready to use.
