Toasted Coconut - Bliss Balls

Bliss balls are about as trendy as it gets right now - and for good reason! They are an easy snack, packed full of energy and they taste delicious. Whip up a batch to have on hand for an afternoon pick me up or breakfast on the go. If you like coconut you're going to love these. Try not to eat them all at once. 

INGREDIENTS 

1 cup coconut flakes
1/2 cup cashews
1/2 cup blanched almonds
1/2 cup dates
2 Tbsp coconut oil

TO ROLL:
1/2 cup dessicated coconut

METHOD

Heat oven to 180'C. Spread coconut flakes on a tray and place in the oven. Cook, stirring every 2-3 minutes until golden brown. - this process can take up to 10 minutes. Once toasted remove the tray from the oven and leave to cool. 
Place all the dry ingredients in the a nutri bullet or food processor and blend until a very fine crumble. If you are using a nutri bullet you may have to stop and shake the ingredients up to mix the nuts in. As soon as the mix is well blended pour it into a bowl. Add the coconut oil and knead well with your hands until the mixture sticks together when squeezed. Divide the mix into 6 even portions and roll each one into a ball. It helps to put a little bit of coconut oil on your hands to stop the mixture sticking. Place the desiccated coconut into a bowl and roll each ball around in it to coat. Store the bliss balls in an airtight container and place in the fridge. Leave to set for at least an hour before serving.
