Sophisticated Summer Slaw

This Salad takes the humble old cabbage and elevates it into a whole other level.  The richness of the parmesan combined with the crunchy cabbage, tangy lemon dressing and heat from the chilies makes the whole thing a taste sensation. Try serving alongside a simple roast chicken for an easy dinner or pair grilled fish or a nice crusty loaf for a light summer lunch. 



1/4 white cabbage
2 long red chillies
1 cup frozen peas (defrosted) 
1/2 cup of roughly chopped mint
1/2 cup of roughly chopped flat leaf parsley
1 cup shaved parmesan
1/2 cup of olive oil
1 lemon, juiced
Salt and Pepper



Finely slice white cabbage and place in a mixing bowl. Slice chillies in half and remove the seeds. Slice the chillies from top to bottom into small strips. Add remaining salald ingredients to the bowl. 
In a seperate bowl whisk together lemon juice and oil. Season to taste with Salt and Pepper. Pour over the salad and mix everything well. Place in the fridge until you are ready to serve. 

Alternatively, you can serve this salad in jars for a picnic feel.
