Paleo Granola

PALEO GRANOLA

INGREDIENTS

3 cups blanched almonds
3 cup cashews
1 cup pepitas
1/2 cup chia seeds
1 cup desiccated coconut
3Tbsp cinnamon

1 cup rice malt syrup
1/2 cup melted coconut oil

1 cup goji berries

METHOD


Place all the dry ingredients (except goji berries) in a food processor and pulse until the nuts are broken into small crumbly pieces with some chunky seeds and nuts still visible, this may have to be done in 2 batches. Pour the mix into a large bowl. Drizzle over coconut oil and rice malt syrup and mix well with your hands rubbing the oil in until all the mix is evenly coated. Spread in a thin layer onto 2 baking trays lined with baking paper. Toast in the oven at 180’C stirring often until the mix is golden brown (10-15 minutes) Leave to cool slightly before adding in the goji berries. Continue to stir mix until cool before storing in  an airtight container. 

Enjoy with coconut or natural yoghurt, sprinkled over a smoothie bowl or chia pudding or simply eaten by the handful straight out of the jar ( guilty! )
