Berry Nice Smoothie Bowl

I am going to start this post by saying, I cannot believe that summer is already over!
I feel as though I've hardly seen the sun this year, although I guess that could also be something to do with the fact that I spent three weeks over Christmas hanging out in Nepal in sub zero temperatures while Melbourne suffered through a heatwave.
Anyway now that we are heading into the cooler months I will begin adding more hearty, warm, comfort recipes to the blog. BUT as the weather is still so gorgeous I am clinging on to the thought of summer and today I am sharing with you one of my favourite 'summery' dishes.

When it's hot I often look for lighter dishes that are easy to digest and leave me feeling carefree and energised rather than heavy and lethargic. I think smoothie bowls are perfect and on a hot day these gorgeous frozen bowls are such a great way to cool down. You can basically put whatever frozen berries or fruit you want into your smoothie. This time I used a mix of raspberries and strawberries but you can use mango, blueberries, blackberries or any other concoction you can think of....GO WILD!

You can also add extra superfood powders if you want to give your bowl a boost - matcha, macca, spiralina, whey or plant proteins are all great additions. Obviously these will affect the flavour so go with caution on these items.

I used my delicious homemade cashew mylk in this smoothie bowl (which you should definitely try as it is sooo easy to make - rich, delicious and contains no preservatives or added extras like a lot of commercial nut milks do.)
But, if you do not have the time you can swap the cashew milk for any other nut milk, coconut milk or coconut water.

And the can basically put whatever you like. Something with crunch, fruit, nuts, chia etc... anything and everything work well here!

1 banana
1 cup of frozen berries
( I used half strawberries, half raspberries )
2 tsp of vanilla essence
3 dates ( optional )
1/2 cup of cashew milk

1 banana - sliced
3 strawberries - sliced
1/2 Tbsp chia seeds
1/3 cup paleo granola
A handful of fresh raspberries

Place al the ingredients in a nutri bullet and blend until smooth. You can add more frozen berries or use a frozen banana to create a more ice cream like texture.
Pour into a bowl and decorate with topping ingredients.

It's that simple, enjoy :)
