Avo SMASH - Bringing Brunch Home

After the continuing debate about the cost of smashed avo in cafes around Melbourne - I've taken matters into my own hands. If you're trying to save your cash OR you just want to make brunch at home this weekend for your friends and family then why not give this simple ( but insanely tasty ) smash a go. 

A simplified version of the smashed avo we serve at Seedling Cafe - this cafe combo will have everyone raving about your skills in the kitchen! No need to tell anyone how easy and quick it is to throw together!!! 

Make sure you also serve up good coffee to really add to the 'cafe' experience. I used my new stovetop moka pot and served up strong black coffee on the side. The perfect combo to cut through the richness of the goats cheese in the dish. Be sure to pick up some beans from your favourite coffee spot. 

 

Avo SMASH
with goats cheese and chilli 

 

INGREDIENTS - per person

1 ripe avocado
1 tsp of olive oil
2 tsp lemon juice
1/2 tsp salt
pepper to taste
50g of goats cheese
a pinch of chilli flakes - to taste
2 slices of gluten free toast. ( I used buckwheat and chia seed bread from gluten free precint. IT'S AMAZING! But a good quality sourdough, rye or wholegrain toast would also work well.) 

METHOD

Toast bread. Scoop flesh from avo into a bowl and add olive oil, lemon juice, salt and pepper. Smash with a fork until smooth and well combined. Taste and adjust salt and pepper if needed.
When toast is ready divide the avo mix evenly between each piece. Stack half on top of each other on a plate. Crumble goats cheese over the top and sprinkle with chilli flakes. Garnish with a drizzle of oil and a few micro herbs ( optional. ) 
Serve and enjoy with a good coffee.
