Awesome Almond Butter


500g blanched almonds
1 tsp good quality salt


Heat oven to 180'C. Spread almonds on a baking tray and place in the oven and roast for 15 minutes stirring every couple of minutes until the nuts are golden and toasted. ( Keep your eye on them while roasting - they will burn very easily!! ) 

While the nuts are still hot place in a food processor and blend for 20 - 25 minutes. Stop the machine every few minutes and scrape down the sides of the mixer. This is the part that gets me everytime. For the first 15 - 20 minutes nothing happens! The nuts just crumble and then turn into a firm lump before finally releasing all their oil and turning into a beautiful smooth butter.  There is always a moment when I think it's not going to work. But it always does. Hang in their, I promise it works!!!

Add salt and blend again. Season to taste. Add more if you prefer a saltier nut butter. 

Use as a spread on toast, or for my delicious oaty, almond cookies ( recipe coming soon). Also try as a drizzle over yoghurt and fruit or put in a smoothie for a delicious, healthy breakfast.
